I was moving my mincemeat pie recipe from my old site to this blog, when I remembered the date-filled cookies I used to make during the Thanksgiving/Christmas holidays. The Apple, Date & Raisin filling is also delicious any time of the year.
Date Filling
This recipe is adapted from Better Homes & Gardens New Cookbook (see Beloved Cookbooks for more about this book).
- 2 cups chopped dates
- ½ cup Rapadura or white cane sugar
- ¼ tsp unrefined sea salt
- ½ cup filtered water
- 1 Tbsp lemon juice
- Equipment:
- Saucepan
- Wooden spoon
- Method:
- Combine dates, sugar, salt and water in saucepan.
- Bring to a boil, then reduce heat, cover and simmer 5 minutes, stirring often.
- Stil in lemon juice, then let cool.
Apple, Date & Raisin Filling
This recipe is adapted from Home Baking Made Easy, by Virginia Roberts, Director Occident Home Baking Institute (see Beloved Cookbooks for more about this book).
- 1 cup homemade apple sauce
- ½ cup raisins
- ½ cup chopped dates
- ½ cup Rapadura or brown sugar
- ¼ cup filtered water
- 1 ½ tsp real vanilla extract
- 2 tsp butter
- Equipment:
- Saucepan
- wooden spoon
- Method:
- Combine all ingredients in saucepan and stir to mix; boil 1 minute.
- Remove from heat and let cool.
