As much as I love crepes, I’d never had the buckwheat crepes used with savory fillings until a Crepe cafe opened in my old Portland neighborhood. Years before, there had been a crêperie in Portland’s old town that served savory fillings on regular wheat crêpes. But buckwheat is definitely better with the savory flavors such as chicken, mushrooms and herbs.
So far, I’m only collecting links to recipes here:
