Alcohol-free Holiday Eggnog

I’ve not yet tried this recipe.

I’ve always loved a good eggnog, flavored with rum or brandy. But this recipe is flavored with dates, nuts and spices for an alcohol-free beverage. It comes to me from Dr. Alan Christianson, a naturopath who hosted the Adrenal Reset Docu-series. I’ve altered his recipe because I have objections to some of his processed ingredients:

  • his own brand of pea protein/starch powder instead of eggs,
  • flax milk instead of dairy or coconut milk.

Healthy Holiday Eggnog

I’ve adapted this recipe from Dr. Christianson’s recipe (1) because of my food sensitivity to protein powders and disdain for plant-based guar and xanthan gums. I’d rather use coddled eggs and add some resistant starch (links to my old website), such as that from plantains or potatoes, and add some freshly ground flax seeds.

In the following analysis of his ingredients, I’ve put those to which I object in bold text:

Instead of eggs, he uses one of his own products: Dr. C’s Adrenal Reset Shake (3). It is made with pea protein and pea starch (a resistant starch) as the main ingredients, but also includes apple pectin, natural flavors, MCTs (medium chain triglycerides), stevia and sea salt (3). He writes:

“The Adrenal Reset Shake can help your adrenals if you are stressed, wired and tired, or crashed. If you’re thriving, The Reset Shake maintains your healthy state. This works because resistant fiber keeps your blood sugar steady for 6-9 hours. Steady blood sugar means your cortisol rhythm is steady to help you lose weight, have great energy, and sleep better.”

He also uses flax milk. Good Karma’s product contains the following ingredients,  (3) which include pea protein isolate and questionable plant gums:

“Flaxmilk (Filtered Water, Cold Pressed Flax Oil), Pea Protein Isolate, Tapioca Starch, Tricalcium Phosphate, Natural Flavors, Sunflower Lecithin, Sea Salt, Guar Gum, Xanthan Gum, Vanilla Extract, Gellan Gum, Vitamin A Palmitate, Vitamin D2, Vitamin B12″

I’d rather use raw dairy milk or coconut milk and add some flax seeds. Real, raw dairy milk is naturally rich in vitamins A and D3 (the D2 in the flax milk is not as bioavailable as D3), Using real local farm eggs provide the beneficial lecithin as well as protein. I also include  MCT oil or coconut oil as an optional ingredient.

Butter extract is added in his original recipe most likely as a flavoring; raw whole milk provides everything butter provides, so I skip it. I’m also not sure why the crushed ice is needed, other than to cool the beverage after being lightly warmed by the turning of the blender.

You can also add resistant starch (plantain or potato) instead of the pea starch in his protein powder, to stabilize your blood sugar.

Ingredients and Equipment:

  • 2 small or 1 jumbo farm fresh eggs from a local farmer, coddled
  • 1 cup raw whole dairy milk, coconut milk
  • 1 Tbsp freshly ground flax seeds
  • 1 Tbsp resistant starch (plantain or potato, optional)
  • ¼ tsp fresh, ground nutmeg
  • ¼ tsp allspice
  • 2 medjool dates, pitted
  • ¼ cup raw cashews
  • ¼ tsp butter extract (optional)
  • 1 Tbsp MCT oil or coconut oil (optional)
  • liquid stevia, as needed
  • 1 cup crushed ice
  • Equipment:
  • egg coddler or cup
  • blender

Method:

  1. Break egg(s) into a small bowl and whip with a fork to combine, then coddle in-the-shell or in an egg coddler;
  2. Pit the dates; chop lightly.
  3. Add milk and coddled eggs to blender;
  4. Grind flax seeds and add with nutmeg, allspice, resistant starch, and butter extract (if using); blend lightly.
  5. Add prepped dates and cashews.
  6. Add ice, and blend until smooth.
  7. Taste for sweetness; add liquid stevia by drop until desired sweetness is achieved, blending after each addition.
  8. Serve
